For the ultimate presentation, tip the ends of the Cannoli shells in chocolate  and pecans.  Ghirardelli makes some fabulous melting wafers. Melt in the microwave in a small bowl follow the directions on the package. Melt in 30 second intervals so you don’t burn the chocolate. Dip the ends of the cannoli shells in melted chocolate, then each end in crushed pecans and place on a parchment covered cookie sheet. Allow the chocolate to harden. To speed up the process place them in the refrigerator for 5- 10 minutes.  These can be prepared ahead of time and stored in an air tight container until your ready to fill.

Fill a pastry bag with filling and insert tip into one side of the shell. Starting at the center, and  fill  working the tip to the outer edge. Remove tip and insert into the other side and repeat. This method keeps you from leaving empty space on the inside of the shells. Now for the wow factor, I fill  an additional pastry bag with caramel apple dip and drizzle over the top. Add some whipped cream and enjoy.
